This week my husband and I had only vegan food. One day, for breakfast, I’ve decided to make vegan pancakes. I’m delighted with how they turned out, hence me sharing the recipe. Also, it means I’m going to make them again.
I had them with chocolate sauce and my husband had them with homemade jam, some of the papaya Jam I’ve made a couple of weeks ago.
Because I don’t like adding too many additives, I thought I should change the milk and eggs with orange juice. Vitamin C is a great additive for baking bread, if you remember my bread with vitamin C recipe from two years ago. It worked in the pancakes too. They rise beautifully and I didn’t have to add anything extra, comparing to the standard version of pancakes.
These pancakes are really delicious and, with the chocolate sauce are great. If you like the chocolate and orange combination, you will love these.
Ingredients for 2 servings of vegan pancakes:
– 150g white self-raising flour
– 200ml orange juice
– 1/2 tsp baking powder
– 1 tsp sugar
– oil for frying (optional)
– 40g dark chocolate (I’ve used organic and fairtrade)
– 2 spoons of orange juice (for the chocolate sauce)
Heat a frying pan over medium heat. Meanwhile, make the pancake batter. In a bowl, weight in the flour and add the sugar and the baking powder. Pour the orange juice and mix by hand with a spoon or with a hand mixer. In a minute the batter should be ready. I always pour half a teaspoon of oil in the frying pan, even if it’s non-stick, but you don’t have to.
Using a small ladle, pour the pancake batter onto the frying pan. Leave to cook at medium heat for 1 minute and a half. Flip the pancake and leave it to cook on the other side for 30 seconds or so.
While the pancakes are cooking, you can start making the chocolate sauce. The ingredients are for 2 servings, but, when I made them, I’ve used half as my husband didn’t want chocolate sauce.
In a small bowl put the dark chocolate cut in pieces and the orange juice. Pop the bowl into the microwave for 30 seconds to soften. Mix the melted chocolate until it becomes a sauce. Make sure, when you are using the microwave that the chocolate is only soften. Have a look midway through and keep it for a shorter time if is starting to melt. If you don’t want to use a microwave, soften the chocolate on the hob, at low to medium heat.
To serve the pancakes, make a stack and pour the chocolate sauce on top. They are very easy to make and, with those delicious flavours, they make for a great breakfast.
