Tres Leches Cake

I’ve made Tres Leches Cake three times so far. For the first two times I’ve made a recipe that didn’t work, the sponge was flat and not very nice looking. The cake was still delicious though. After that I’ve made a new recipe and it worked lovely, thus I’m sharing the recipe. I will make it again, because it is a lovely cake.

This Mexican cake is called Tres Leches Cake due to its ingredients. It is a delicious cake made with three types of milk: whole milk, evaporated milk, and condensed milk. I’ve decorated it with freeze dried strawberries because I love adding them on cakes. If you want to make it, please consider making it a day before, and leave it overnight to soak. That makes it great for occasions, when you want to have most things ready the day before.

Ingredients for Tres Leches Cake:

– 6 large free range eggs
– 120 g flour
– 80g sugar
– 1 tsp vanilla paste
– 100 ml milk
– 1 can of condensed milk, 397g
– 1 can of evaporated milk, 400g
– 300ml whipping cream
– 20g icing sugar
– freeze dried strawberries

Pre heat the oven at 180C or 160C for fan assisted ovens.

Whisk the yolks with half of the sugar and the vanilla paste. In another bowl, whisk the egg whites until they form soft peaks. Add the rest of the sugar and continue whisking until stiff peaks. You can use a hand mixer to make it easier.

Tip the yolks over the egg whites and fold them in with care. Gradually add the flour and fold it in. Pour the cake batter in the oiled baking tray. To make it easier to remove from the tin, put baking paper on the bottom of the tin. Now put the cake in the oven and leave to bake for 30 to 40 minutes. I let mine bake for 40 minutes this time.
When the cake is baked, take it out of the oven and transfer it on a cooling rack. Leave to cool completely before putting the sponge back in the baking tray.

Tres Leches Cake

Make the syrup by mixing in a big bowl the milk, evoporated milk, and condensed milk. Mix the ingredients for less than a minute. Prick the sponge with a fork. Pour the milk syrup on top of the sponge. It will seem like it is a lot, but it will soak into the sponge overnight. Cover with cling film.
The following morning, whip the cream with a bit of sugar. Add a bit of vanilla if you fancy. Spread the whipped cream on top of the sponge and level it with a long knife. Sprinkle freeze dried strawberries over the cake. Now it is ready to be served.

  1. This looks lovely Anca. The topping is so pretty with the freeze dried strawberries . I have not heard of this type of cake before, but it looks great and fairly easy to make too which I especially like. xx

  2. These look delicious, it reminds me of the cakes you see on holiday when you go all inclusive, might have to give these a try.
