Tomato and cauliflower soup

My tomato and cauliflower soup has a little bit of a story behind it. Last month I’ve had a smoothie challenge (a smoothie every day) and it was fab. I managed to complete the challenge. It was easier than last year because I didn’t plan to take pictures every day of the challenge.

01 Tomato and cauliflower soup

After finishing it, I decided to continue, but by adding a little twist: smoothie or soup. It will be even more easier to keep up and, most of all, it will help me get my 5-a-day with less hassle. The soup is ready in less than 30 minutes, as most of my recipes for soup are. I like the simplicity these kind of recipes have.

Ingredients for Tomato and cauliflower soup. 6 servings:

– 1 medium cauliflower
– 2 cans of plum tomatoes
– 2 spoons of tomato paste
– 1 small onion
– 2 carrots
– 1 tsp turmeric
– 1/3 tsp garlic granules
– 1/2 tsp onion granules
– 1/2 tsp paprika
– 1 tsp salt

Wash and chop the cauliflower, the onion and the carrots. Put them in a big pan over medium heat and boil them for a few minutes. Add the plum tomatoes and the tomato paste and boil for another 5-10 minutes.

I prefer my veggies a little bit raw, I don’t notice any significant difference in flavour, but I think it’s healthier this way. You can boil them as much as you like.

When the veggies are cooked, blend all the veggies in the food processor or you can use a hand blender. Add the spices, taste the soup and, of course, add some more if you think you want a stronger flavour.

  1. Love this combination! I used to hate tomato soup, then tried it again after 20 years a few months ago, and since that I’m in love 🙂
    Definitely saving this recipe for later, can’t wait to try it! The cauliflower is such a great addition!
