Stuffed mixed squash

Last time we bought groceries, I’ve seen this beautiful mixed squash and I said I must buy some. The plan was to leave them as intact as possible, so, I stuffed them. These 3 squashes had 794 calories in total. It’s easy to make, delicious, filling, and also low in calories. It counts towards your 5-a-day.

02 Stuffed mix squash

Ingredients for 3 Stuffed mixed squash:

– 3 squash
– 100g of dry mince soy, soaked in boiled water for 30 minutes
– 100g tomato paste
– 2 onions chopped
– 1 spoon of oil
– salt
– pepper
– dried basil
– dried parsley

The stuffing is easy to make. I’ve used a recipe my mother was making when I was a teenager.

Heat a pan, toss the oil and onions and let them sweat. After the onions are changing colour and become translucent, add the minced soy and stir. Add salt, basil, pepper and mix. After a couple of minutes, add the tomato paste and stir until the ingredients are well mixed. Take it off the hob and fill the squashes that were prepared in advance.

The squashes are ready to get into the oven. Place the tray into the preheated oven and leave them for about 1 hour. I’ve baked them at 160C fan, 180C/356F/gas mark 4.
