Rainbow pizza

I saw the idea of a Rainbow pizza on Instagram and thought it’s amazing. That pizza had different ingredients on top and a different crust, but I made it how my husband and I like it. Feel free to let your imagination going and make the pizza as you like it.

Ingredients for Rainbow pizza:

– wholemeal self-raising flour
– water
– baking powder
– homemade tomato sauce
– grated vegan cheddar
– tomatoes, orange pepper, yellow pepper, broccoli, red onion, and kalamata olives
– 1 spoon of olive oil

Start by removing broccoli florets from the stem. Put them in water and boil them for 10 minutes. Meanwhile, chop the tomatoes and toss them in a heated pan with the olive oil. Stir from time to time. The tomatoes should be kept on the hob until they release the extra moisture. Raw tomatoes are likely to make the pizza crust soggy.

Pre-heat the oven at 200C or 180C fan.

Make the pizza dough by mixing the flour with the water and the baking powder and the salt. Roll the pizza dough with a pin and put it in the baking tray, on non-stick paper. Spread tomato sauce on top of the pizza and add the grated cheddar. Chop all the veggies before you start making the pizza. Arrange the veggies on top as the colours of the rainbow.

For red use tomatoes; for orange peppers or sweet potatoes; for yellow you can use yellow pepper, corn, yellow courgette with the peel on top. The green part can made with broccoli, green peppers, courgette, spinach, asparagus. The last part of the rainbow is purple-violet. I’ve used red onions with the skin on top and kalamata olives. You can also use aubergines.
Some of the veggies must be cooked in advance, as the 20 minutes in the oven might not be enough for them.

After the pizza is assembled, bake it for 20 minutes. It’s so easy to make and delicious with all those flavours from the veggies.

  1. I love this idea! It would force me to be more adventurous with my toppings too – I’m in a bit of a mushroom/olive/artichoke rut at the moment 🙂
