Pizza pancakes

I made pizza pancakes for Pancake Day this year and I thought it would be nice to share the recipe. I’ve added pizza seasoning to the batter, so these were just a delight to have. They work nicely because they are so fluffy, but filling and delicious. It’s also a good idea if you are in a hurry, but still want something really nice. It takes about 20 minutes to make the pancakes and another 5 under the grill for the cheese to melt. It’s faster than ordering a pizza and, of course, the taste doesn’t compare.

These are small, so they would work as a starter for 4 people, but you can make them bigger, as a main for 2 people.

I only used vegan cheese because we are 100% vegan now. I cut the cheese and the salami in pizza-style shapes so it’s more fun. I would also highly recommend using mushrooms in brine. I got a big jar and scooped the smaller ones because these were more appropriate for the size of the pizzas. Alternatively you can just cut the mushrooms in small pieces.

Ingredients for Pizza pancakes:

– 150g self-raising flour
– 200ml barista-style oat milk
– 1/2 tsp baking powder
– tomato sauce
– grated cheeze
– mozzarella rounds
– vegan salami
– olives
– mushrooms
– mini red peppers
– pepper
– pizza seasoning
– oil for frying (optional)

Pizza pancakes

Start by making the batter. Mix the flour with the oat milk, baking powder, and add the pizza seasoning and freshly grated black pepper. Mixing by hand is fine and it’s ready in less than a minute. Heat up a pan over medium heat and sprinkle a bit of oil. Pour a quarter of the batter and spread it in a round shape with the laddle. Leave to cook for a couple of minutes before flipping and leave it to cook on the other side for another minute. Repeat until you make all four.

While the pancakes are frying, prepare the toppings for the pizza. Cut the salami and the cheese, the olives if needed. I cut the small red peppers in two.

Prepare a baking tray and line it with baking parchment. As the pancakes are ready, place them on the baking parchment and spread the tomato sauce on top. Add the cheese first so it will keep all the other ingredients on top as it melts. Add the rest of the ingredients. When all four pancakes are ready put the baking tray under the grill for 5 minutes and the pizzas are done.

While they are cooking underneath the grill you can clean up. It’s such a great recipe. I will do this more often. There is a bit of faffing around due to all the things that needed to be cut in small pieces, but that can be done while the pancakes are frying.
