I made this peanut butter and banana pinwheel yesterday using only 4 ingredients and they were delicious. I used a ready made roll of puff pastry I already had in the fridge. When I bought the pastry I had no idea what I want to do with it. The idea of pairing up peanut butter and banana was a great one. The flavours compliment each other and work together nicely. It’s also a dessert you can make in very little time.
I’ve used smooth peanut butter, but you can use smooth or crunchy, according to your taste. It might also depend on what you have in the cupboards. As for the puff pastry, you can use either full fat or lighter, both options bake similarly, so you might not be able to tell the difference between them.
Ingredients for 10 Peanut butter and banana pinwheels:
– 1 roll of ready made puff pastry
– 2 bananas
– 1 big spoon of very smooth peanut butter
– 25g sugar
– icing sugar for dusting (optional)
Preheat the oven at 200C or 180C fan. Flatten the pastry roll on the worktop. Spread the peanut butter on the pastry using a knife and sprinkle the sugar on top. Crush the bananas in a bowl. Now tip them over the pastry and spread them evenly.
Roll the pastry as tight as possible. If you have time, leave it in the fridge for 10 minutes to harden a bit. Cut the pastry into 10 pieces and lay them flat on a baking tray lined with baking parchment. Bake the pinwheels for about 20 minutes or until golden brown. Take the baking tray out of the oven and leave them to cool for a couple of minutes.
Transfer them and leave them to cool completely on a cooling wire. You can sprinkle a bit of icing sugar on them, when they care cold, before serving them. If you prefer to serve them warm, leave the icing sugar out.
