Onion and pepper crepes

Onion and pepper crepes are not the first savoury crepes I share on my blog, see here the other ones, but, unlike those, these are dairy-free and more in line with our diet. I usually make mushroom ones. If you fancy mushrooms, then you can fill the crepes with Spicy mushrooms with peanut butter, it works, I’ve tried it many times.

I made this with frozen veggies, mainly because I did not have a lot of time to go grocery shopping and chopping veggies, and also because having frozen veggies is really great if you run out of fresh veggies, as I did. The frozen vegetables are just as good as the raw ones are from a nutritional point of view and, of course, if you cook them, there is no difference in taste either.

I did not specify quantities for the frozen veggies because you can add as much or as little as you like. If you want, you can add some other frozen veggies too, for example peas. Also, you can make the crepe batter the night before and you can fry the crepes in the morning, if you want to serve them for breakfast. It is also a great dish if you have friends over, as it does not take a lot of time to cook.

Onion and pepper crepes. 2 servings:

– crepes, following my basic recipe
– frozen onions, chopped
– frozen peppers, chopped
– 2 spoons of oil
– dried basil
– salt
– dried parsley
– 1 clove garlic, mashed
– vegan cheese
– black pepper
– chilli flakes, sweet

Make the batter for the crepes.

While the crepes are frying, you can make the filling. Start by heating a pan over medium heat. Pour a spoon of oil and toss in the frozen vegetables. Leave to cook, stirring from time to time until all the water has evaporated. Pour the second spoon of oil, add the garlic, the dried herbs, salt and stir. Leave to cook for a few more minutes, stirring so they cook evenly.

Put the veggies on the crepe and roll. Put the crepes on a plate, sprinkle a bit of vegan cheese on top and put it in the microwave for 30 seconds, so the cheese melts a bit. Mill some black pepper and sweet chilli on top of the onion and pepper crepes, add the salad or the pickles on the plate and now the dish is ready to be served.

I had the onion and pepper crepes with pickled okra. For me the combination works great and I love okra. You can serve them with something else, like a salad or a fresh tomato chopped, with a bit of salt sprinkled on top. They are delicious on their own too.

  1. I’ve made pancakes, but never made crepes. They look delicious!! Mmmm… I have pickled okra in the fridge. I might have to go have one. 😉
