Yesterday Great British Bake Off started and I want to bake along, a recipe each week. For this week I’ve made Madeira cake, their first challenge and I loved it. I’ve made a linky if you want to join in.
It was the first time I’ve baked it and it was delicious. I made the classic recipe as I wasn’t sure how it will taste like. I’m so pleased with how it turned out that I’m going to bake it with different twists.
Ingredients for 2 small loafs:
– 275g self-raising white flour
– 175g butter, softened
– 175g sugar
– 4 small eggs (or 3 large ones)
– rind from 1 unwaxed lemon
– icing sugar and lemon juice for the icing
Pre-heat the oven at 180C/160C fan. Oil the baking trays so the cake doesn’t stick. Mix all the ingredients with a mixer until they are all properly combined. Put the batter in the trays and bake them for 50 minutes.
Leave the cake in the tin for a few minutes, then take it out and leave it to cool on the rack.
Make the icing by mixing icing sugar with lemon juice and pour it over the cake.

I love the Great British Bake Off, baking along with it is such a good idea, the cake looks great! Sadly i’m pretty rubbish at baking.

I’m not organised to join in the GBBO challenges, but admire how organised you are. Madeira is one of my favourite cakes, I haven’t made it for years, perhaps I should. Yours looks absolutely perfect.
