This recipe is part of Taste the World challenge. Chowder is a type of soup, originated from north America. It was made with corn or seafood and the base of the dish is either milk or cream.
Ingredients for 4 servings. Corn Chowder:
– 1 onion
– 400g creamed corn (I’ve made it as I didn’t have any.)
– 300g corn
– 700ml vegetable stock
– 300ml milk
– olive oil
Saute the chopped onion in olive oil for a couple of minutes. Heat the milk and cream on the hob. Put the corn on top and stir until is starting to reduce.
I didn’t measure the milk or cream. It was enough to barely cover the corn.
When the onions start to get brown, add the rest of the ingredients. Stir the soup and bring to boil. Add salt and pepper to the soup and leave it to boil for a few minutes.
I topped the soup with a few fresh coriander leaves.
