I love eclairs and coffee, so I jumped at hubby’s suggestion to make a batch of Coffee eclairs. I shared the recipe for the eclair puffs.
Ingredients for the Coffee eclairs:
– 125g sugar
– 50g sifted flour
– 2 teaspoons of instant coffee
– 3 egg yolks
– 1 egg
– 1 teaspoon vanilla paste
– 500ml milk
Put the milk and the vanilla paste in a saucepan and bring to a boil.
Mix the egg with the yolks.
Add the sugar and whisk the mixture with a mixer until white. Add the flour and combine.
Add the instant coffee that was dissolved in a couple of teaspoons of milk and combine. When the milk starts boiling, pour it over the egg mixture and combine it. Pour the cream back in the pan and put it on the hob. Leave it to cook for 4-5 minutes, stirring. When the cream is thick is ready.
Pour the cream into a cold bowl or tray and leave it to cool.
To prevent it from making a crust, cover it with cling film.
Take the puffs and fill them with the cream using a pipping bag.
On top coat the puffs with melted chocolate. I’ve used dark chocolate and a brush, to create some texture.
