Chocolate Cookies, not something I do often, but we do love them. I’ve looked at a few recipes before making these and the recipe is my take on chocolate cookies. They are not very sweet because I’m not keen on sugary cookies. I prefer dark chocolate. I’ve only made 10 because I baked these when I made lots of biscuits, as a surprise for my husband. If I was to do the recipe today, I would, most likely, double the quantities.
One of the best things is that it takes less than 30 minutes to make the biscuits, baking time included. This means they can be made fast, if you have guests or a craving for something sweet. Also, with the all in one method, you only need a single bowl to make the dough, so washing up is very easy and fast too.
Ingredients for 10 Chocolate Cookies:
– 120g white plain flour
– 75g demerara sugar
– 1 free range egg
– 45g butter, soften, at room temperature
– 1 spoon cocoa powder
– 35g peanut butter
– 50g white chocolate chips
Pre-heat the oven at 180C or 160C for fan assisted ovens. While the oven is heating, you can make the cookie dough.
I’ve used the all in one method to make these chocolate cookies. In a large bowl, put all the ingredients, except the white chocolate chips. Mix until all the ingredients are fully incorporated. After that, toss in the white chocolate chips and incorporate them with care, so they don’t break.
Line a baking tray with baking paper. Weight in the cookie dough and divide by 10. Make balls in your hands and flatten them a bit before placing them on the baking tray. Put the baking tray in the oven for 10 minutes. When the cookies are baked, take them off and leave them to cool in the baking tray for 5 to 10 minutes. After that you can transfer them on a cooling rack and let them cool completely.
