I had a couple of avocados and I had no idea what to make, until I thought of Avocado pasta. It’s so easy to make, takes 15 minutes from start to finish and it has only a few ingredients: three main ones, spices, and a bit of lemon juice. The avocado makes for a very creamy and rich pasta sauce, but is filled with healthy fats. This dish is vegan because there is no point in adding anything else to it. It’s delicious on its own.
As I mentioned before, the dish is ready in very little time. I’ve mentioned the ingredients I’ve used, but I didn’t give specific amounts besides the pasta and avocado as it is all down to how much you like capers and if you prefer more or less spices in your food.
Ingredients for 2 servings of Avocado pasta:
– 160g wholemeal pasta
– 2 medium size, ripe avocados
– a handful of capers
– Mediterranean spices
– salt
– pepper
– a bit of lemon juice
Start by boiling the water. Toss in the pasta and stir. Leave to boil for 10 minutes or according to the instructions on the package. If you are using a bean pasta instead of durum, then it will take less time, so be aware of the cooking time for the pasta.
Meanwhile, wash and peel the avocados. Put them in a bowl and pour a bit of lemon juice on them, so they don’t change their colour. Add the spices, salt, pepper, and blend with the hand blender. Leave on a side while the pasta is cooking.
After the pasta is done, drain and rinse with cold water to stop it from cooking further. Scoop the avocado sauce on top and stir. Add the capers and incorporate them with care, so they don’t get mushy. Now the dish is ready to be served.
This looks so good – I love avocados! I make a similar recipe using avocados, fresh basil, scallions, garlic, and lemon juice. Quick, easy, and healthy!
