Apple bake tray with nuts

I bought 4 bags of apples a few days ago to make a dessert. I wasn’t sure how I’m going to prepare them. As it happens to me sometimes, I’ve started cooking and developing the recipe as I was going along. This is how I’ve made apple bake tray with nuts. The recipe is healthy, low in added sugar as the apples were sweet and low in fat.

01 Apple bake tray with nuts

I’ve added 80g of sugar. You can add less, if you have a sugar substitute. Of course, you can add more, if you prefer sweeter desserts.

Ingredients for 12 slices of Apple bake tray with nuts:

– 10 small apples
– 80g sugar
– 75g white plain flour
– 75g wholemeal flour
– 2 eggs
– 1 tsp cinnamon
– 60g smooth peanut butter (unsalted)
– baking powder
– 12 pieces of walnuts
– 10-15g butter

Wash and chop the apples with their skins on, put them in a saucepan. Add 60g of sugar and mix it. Put the saucepan over low to medium heat and let them cook. Remove them from the heat when the apples are done.
In a bowl, mix the flour, the baking powder and the cinnamon, add the peanut butter. Blend the apples in a food processor until they become a puree. Add the apple puree in the flour mixture and mix with a wooden spoon. Pour the beaten eggs on top and incorporate them.

Pre heat the oven at 180C or 160C for fan assisted ovens.
Butter or oil the tray and sprinkle the remaining sugar. Add the walnut pieces in rows, so it’s easier to cut when is ready. Now put the tray in the oven. Bake it for 50 minutes or until the skewer comes out clean, when testing.

When the cake is ready, remove it from the oven and flip it over. Leave it to cool on a cooling rack. When the cake is cold, cut it into pieces and enjoy.
